I love making our food at home. Cause, well – for one, it’s wayyy cheaper.
And two, because I know exactly what is in it.
I can add or take away ingredients depending on what flavors or nutritional values I’m looking for.
No added sugar? No preservatives? No artificial crap? No problem.
Organic? Gluten-free? (check your oats!). You got it.
Your food can be whatever you need it to be. Just adjust the ingredients for you need.
This brings me to this homemade granola!
I would grab a bag of granola every week at the grocery store, but then I started paying more attention to food labels.
I looked at the back of the bag of the what I thought was healthy granola and realized – this crap isn’t healthy.
And I could very easily just make this at home.
So I put the bag back and I did. I went home and made (a few days later) the most delicious batch of granola known to man. (I may be being a tad bias here, but you’re going to have to make it to see how good it is for yourself.)
Here’s what you need:
4 cups old fashioned oats (this is the kind I always use and love)
1/2 cup ground flaxseed
1 1/2 cups raw sliced almonds
1/4 tsp cinnamon
1/4 tsp ginger
1/2 tsp salt
1/2 cup melted coconut oil
1 cup honey
1 tsp vanilla extract
Here’s what you do:
Measure out all of the dry ingredients and add it all together into a large mixing bowl. Give them a good stir before adding in the wet ingredients.
Melt the coconut oil and add it in. Followed by the vanilla extract and honey. Stir until everything is well combined.
A little side note – be sure to use a bowl that is large enough for all the ingredients. I am very guilty of never using a large enough bowl for what I actually need.
Cover a baking sheet with either parchment paper or a silicone mat. (These are my favorite sheets and mats that I bought as a set!) Use the back of a spoon to smooth it out into an even layer.
Pop it into the oven and bake at 350F for 20-25 minutes. Stir the granola halfway through baking.
For a more chewy granola, leave it in for 20 minutes. For a more crunchy granola, leave it in for 25.
Or find your perfect texture somewhere in the middle.
Break it up and enjoy it on top of some homemade yogurt or snack on it as it is. (It will be hard to resist – it’s sooo good warm out of the oven!)
Note to self: This would also be great to use in a homemade trail mix!
The recipe does make a lot of granola so I usually keep half out on the counter and I store the rest in the freezer to bring out at a later date. The granola will keep fresh on the counter for up to two weeks.
I hope you enjoy making (and eating) this recipe!
Until next time –
