Store flowers in an airtight container in the fridge and they will keep fresh for several day.

Wild violets are the first to bloom on our property in the spring and I have been steadily collecting them to try some different recipes.

So far, I have tried making wild violet simple syrup which was a huge hit in our house. The kids loved making magic pink lemonade with it.

Next up, is some wild violet sugar.

The flowers leave the sugar a beautiful shade of light purple with darling little purple specks throughout.

This recipe is so easy to make. The hardest part is separating all the petals from the septal. And that’s really just more tedious than it is hard.

That’s when little helping hands really come in handy!

Aren’t those little specks just darling?

How to Make Wild Violet Sugar

Here’s what you need:

  • 2 cups granulated sugar
  • 1 cup wild violets

Here’s what you do:

Start by separating the flower petals from the calyxes (the green base of the flower).

Pour 2 cups of sugar into a food processor and then pour the wild violet petals on top.

Secure the lid and pulse until all the petals are processed and mixed into the sugar.

Turn the sugar out onto a baking sheet lined with parchment paper and allow it to dry for at least 24 hours.

Give the sugar a stir every now and then to ensure it all dries evenly.

After it’s dried store it in an airtight container and it will keep for about a year.
